Vegetable Minestrone Soup

This hearty minestrone soup is perfect on a cold winter day!  Add some crusty bread and you have a meal!  

Ingredients:

  • 1 small onion, chopped fine
  • 2 stalks celery, thinly sliced
  • 2 cans beef or vegetable broth (13 ¾ oz each)
  • 1 can (16 oz) spicy chili beans
  • ½ cup small pasta 
  • 3 whole carrots, thinly sliced
  • 2 Tbsp. olive oil
  • 2 cans (14 ½ oz) Italian Stewed tomatoes
  • 2 zucchini, thinly sliced
  • Also: ½ tsp oregano, ½ tsp basil, ¼ tsp garlic, ¼ tsp pepper, ½ teaspoon salt

Directions:

  • In heavy 4 quart pot, stir fry onion, carrot and celery in oil until crisp tender.
  • Stir in broth, tomatoes, beans and seasonings.
  • Cover and simmer for 20 minutes.
  • Stir in zucchini and pasta, bring to boil and cook stirring occasionally for 10 minutes or until pasta is tender.
