Slow cooker Salsa Chicken with Black Beans and Corn

This EASY slow cooker chicken dish is cheesy and delicious, make with boneless chicken breasts, black beans, corn and salsa topped with cheddar cheese. YUM!  


  • 2 cups fresh or frozen corn
  • 15 oz can black beans, rinsed and drained
  • 2 boneless chicken breasts, halved lengthwise
  • ½ teaspoon salt
  • ¾ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • 1 ¼ cup chunky mild salsa
  • 1 cup sharp cheddar cheese (shredded)


  • Combine beans and corn and put in slow cooker.
  • Season the chicken w/ salt, garlic powder and cumin.  Place in slow cooker and top w/ salsa.
  • Cover and cook on LOW for 6 hours.
  • Top with cheese, cover and cook an additional 5 minutes.
  • To serve, transfer to plate and serve over rice or cauliflower rice.
