Brunch for Lunch

Join us for a virtual cooking class with Martha!  In this mini-workshop students will be shown how to make a simple brunch.  We will start with  buttermilk pancakes, creating  them into two cute pancake animal faces, as well as an egg dish to complete our meal. Students will be introduced to several utensil terms, and vocabulary as well as being exposed to the joy and ease of making a fun brunch.  A short story will also be included, so come one come all for a flippin' cute time!

What you'll need to have set up to use during the class:
pancake griddle
wire whisk
kitchen scissors
cheese grater
one 6 cup muffin tin
cooking spray or grease

Ingredients to have ready to make the Flippin Cute Pancakes:
 I cup flour
 2 Tbsp. Sugar
 1 tsp baking powder
 1/2 tsp baking soda
 1 cup buttermilk
 1Tbsp oil
 1 large egg

 1 banana ( sliced)
 1/4 cup blueberries

Combine all dry ingredients in a large bowl, and stir gently.  In a 
small bowl combine the oil and egg. Add this to the dry ingredients. The batter will be thick and it's ok to have lumps.  Spoon approximately 1/4 cup onto a hot griddle.  Watch carefully for bubbles to form on top of the batter.  This is when it is time to flip them over.  Watch carefully for the pancake to cook ( About  a minute depending on the heat of your pan or griddle).  Lift off the griddle onto a plate.  Add butter and syrup.

Ingredients for Baked Egg Cups for Six:
one 6 cup muffin tin
cooking spray or grease
6 large eggs
4 oz of your favorite cheese ( cheddar or colby work well)
6 slices of sandwich slice ham ( cold cuts are fine)

Preheat the oven to 350.

Spray the muffin tin or grease each cup.
Place a slice of ham into each cup so it goes up the sides.
Break an egg into each cup on top of the ham.
Place in the oven for 13 minutes.  ( set a timer)
Meanwhile, grate the cheese.

After 13 minutes remove the pan and sprinkle with the cheese.  Return to the oven for approximately 3 minutes. Take out the second time and serve!  You can also do this with scrambled eggs if you prefer them to
sunny-side up.
